Lynna's Baked Brie Appetizer

Encourage guests to include puff pastry in their servings by cutting an "x" in the cooked appetizer's center and turn back to reveal the wonderful cheesy mixture inside.

Using bottled mushrooms is a great time saver. If you prefer, as I do, to saute' your own then I recommend the following recipe:

Sauteed' Mushrooms
1 8-oz pkg sliced white mushrooms
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons Head Country Premium Marinade
1/2 cup white wine
1/2 cup chicken broth
Fresh-cracked black pepper, to taste

Combine all ingredients in skillet over medium-high heat. Once mixture starts to boil, reduce heat and cover. Simmer for 20 minutes. (Mushrooms will release their moisture and cook way down.) Uncover. Increase heat slightly and continue cooking until liquid is evaporated, 10 - 15 minutes. Stir often. Serve with steak or in virtually any recipe calling for cooked mushrooms.

Ingredients:
1 sheet puff pastry, thawed
14 oz Brie, rind removed
1 small jar sliced mushrooms
1 egg
1/2 teaspoon Head Country Seasoning

Herb Butter
8 oz cream cheese, softened
1/2 cup butter, softened
1/2 cup shredded parmesan cheese
1/4 teaspoon garlic powder (or to taste)
1/4 cup chopped fresh parsley


Steps:
Position oven rack in center of oven. Preheat oven to 375°F.

Cut brie into cubes.

Line a pie plate with aluminum foil. Spray well with non-stick cooking spray. Place puff pastry sheet into pie plate.

Layer in this order: mushrooms, brie cubes, herb butter. Fold puff pastry over ingredients and pinch seams to seal. Gently turn over.

In separate bowl, thoroughly whisk egg with 2 teaspoons water. Brush puff pastry with egg wash. Sprinkle Head Country Seasoning over top.

Bake 30 minutes or until golden. Serve hot with crackers.
