Sweet & Spicy Toasted Pumpkin Seeds

Ingredients:
Seeds from fresh pumpkin

1/4 teaspoon kosher salt
1/4 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon cayenne pepper (or to taste)
4 tablespoons brown sugar, divided

2 tablespoons peanut oil

Steps:
Position oven rack in lower third of oven. Pre-heat oven to 250°F.

Clean seeds, removing all pulp and strings. Spread on parchment-lined cookie sheet. Bake for one hour.

In a medium bowl, combine spice ingredients with 3 tablespoons brown sugar. Toss seeds in mixture.

Heat peanut oil in large skillet until it shimmers. Saute' seeds with remaining 1 tablespoon brown sugar until golden. Remove from pan and return to the spice mixture. Toss again and then layer seeds on cookie sheet to cool and dry. Store in airtight container.
