Ingredients: 1 lb ground beef 2 eggs, beaten 3/4 cup fine breadcrumbs 3/4 cup minced onion, divided 2 tablespoons minced green pepper 1/2 teaspoon Head Country Premium Marinade 4 oz Cheddar or Pepper Jack cheese, cut into 36 1/4 inch cubes 2 teaspoons Head Country Bar-B-Q Sauce

Steps: Combine ground beef, eggs, breadcrumbs, 1/4 cup minced onion, green pepper, Head Country Premium Marinade, salt and pepper in a large bowl. Knead to combine well.
Shape ground beef into 1-inch balls. Press one cube of cheese into center of each meatball. Pinch meat again to seal cheese inside.
Cook meatballs in large skillet over medium-high heat until browned on all sides. Set aside to drain. Sprinkle Head Country Seasoning over top of meatballs.
