Question: My ribs are not consistently good. Sometimes they have great flavor (thanks to Head Country Championship Seasoning) but are not tender and sometimes its just the opposite. Sometimes they turn out just awesome. Any ideas on how to get more consistency out of my ribs?
Richard, Good question. I suggest the following tips. Cook/smoke the ribs for 3 hours at 275 degrees. Then place ribs in a double layer of foil, pour a thin layer of your favorite selection of Head Country BBQ sauce over the top of the ribs and brush out evenly. Close the foil tightly and cook ribs for another hour maintain the 275 degree temp. After one hour the bones should start to pull through the backside of the ribs. If not cook for another 15-20 minutes. Remove from foil and brush another coat of bbq sauce on the top of ribs, glaze them over the coals to carmelize the sauce in with the seasoning and fats of the ribs. Remove from smoker and let rest for 15 minutes. Slice and enjoy, Hope this helps your consistency issues. Paul
