How many pounds of whole hog per person to cook?
How many pounds of whole hog and chicken leg quarters do you think I should cook to feed 600 people? Do you have any suggestions on cooking whole hog? Thank You, Steve
Steve, My suggestions are: Chicken leg quarters usually weigh one pound. Seperate the leg and the thigh after cooking. Figure one piece per person. On the whole hog there are two options: 1. if you cook with the bones in your need to figure one pound per person due to the shrinkage. 2. have the butcher bone the carcass out and stuff it with pork butt. If they do this you can get by with 150-175 pound hog. This way the guests get a 1/4 pound of meat. You won't be paying anymore for the stuffed hog versus the bone in hogs. The plus to the stuffed hog is only one animal, versus 3-4 bone in, whole hogs. I hope this helps and makes sense. Let me know if you have other questions. Paul
