Best Injection for a Boston Butt or Shoulder
Question: WHAT IS THE BEST INJECTION TO USE FOR A BOSTON BUTT OR SHOLDER WHEN MAKING BAR-B -QUE-USING A SMOKER
Bill, Head Country's products are good on all cuts of meat but especially good on pork. Due to the fat content of the Boston Butt or shoulder I do not inject. I season liberally with our Head Country All-Purpose Championship Seasoning and sprinkle a little of our Head Country Premium Marinade on both side. I then put in plastic container and refrigerate overnight. When cooking I cook at 275-300 degrees for 3 hours and then wrap in foil and cook for an additional 2-3 hours. When the internal temp gets to 190 degrees then remove from cooker. Hope this helps you out, Thanks Paul Schatte.
