Loaded BBQ Fries. We know it's hard to believe, but they're even more delicious than they sound.
1 package frozen shoestring french fries
1 pound (16 oz.) pulled pork (perfect way to use that leftover smoked pork shoulder)
1 cup shredded Colby Jack cheese
1/4 cup cotija cheese (sub feta, queso blanco, or any crumbled cheese)
1 small tomato, diced
1/2 white onion, diced
1 bunch green onions, chopped
1. Preheat oven according to french fry package instructions and cook for the minimum time indicated. Remove fries from oven and season with Head Country Championship Seasoning.
2. Cover fries with pulled pork, cheese, onion. Return to oven and bake until cheese has melted, about 10 minutes.
3. Top with tomatoes, green onions and additional Head Country Bar-B-Q Sauce as desired.
