Quick and Easy Steak Tacos

What it is: Some serious tacos with some serious beef. Chuck steak makes for the perfect hearty filling for street-style steak tacos. All it takes is a simple marinade and a quick sear on a smoking hot grill before you’re slicing the beef to fill your tortillas with all your favorite toppings.
What Kita says: “I decided it was time to make steak tacos as good as those I had experienced abroad. Or at least, good enough until I could get back to the adventuring. These did not disappoint, actually, they got better with every bite and the “cheap” cut was the perfect choice for recreating the salty, spicy, citrus flavors I was craving.”

Instant Pot Mississippi Pot Roast

What it is: Your new go-to pot roast recipe, made quick and easy in the Instant Pot or your pressure cooker so you aren’t spending all day in the kitchen. Folks looking for a keto pot roast are going to love this dish, too.
What Kita says: “For any slow cooker, or pressure cooker roast beef where you are looking to shred the meat, you want a hearty cut. The chuck is a go-to for me, with a deep flavor and it has a decent amount of fat marbled into the beef that will render as it cooks, and becomes easily shreddable and tender when cooked in the Instant Pot. If you can’t find a chuck, you can substitute it with a sirloin roast, top blade, or rump roast for this recipe.

What Kita says: “I am always looking for the next recipe to make for a big crowd. Something fun, fast, and loaded with flavor. I am all for manning the grill all day long, but sometimes, you just need a recipe in the back pocket that can work for a make-ahead toss on the grill pre-game party. Gather the right group of friends, and make this. Because you need an excuse to toss this recipe down in front of them and make them think you are a total BBQ genius.”

What Kita says: “This is one of those incredibly easy meals. As the case with most instant pot recipes, dinner is on the table in 30 minutes with time to set the placemats and silverware out to spare. The broth is filled with savory flavors and the hint of spice really melds deliciously with the tender chicken making them some of the best chicken tacos or even a great base for a twist on chicken tortillas soup.”

Let yourself get transported back to art class. Once you have mastered the bacon weave, you can put your signature spin on this fatty in a thousand different ways, by seasoning the sausage or stuffing with anything you can dream up.”

What Kita says: “Once I got over my fear of the shrimp drying out, sticking, and overcooking on the grill, I’ve become a master of popping shrimp on the grill a few times a month as a low-calorie satiating dinner plan.
