Roasted Cauliflower “Mac” & Cheese

This creamy, savory, veggie side dish hits all those mac-and-cheese buttons. Pairs well with all your BBQ favorites while kicking carbs to the curb.

Ingredients

Cauliflower, 1 large head or two small, cut into bite-sized florets
Olive oil
1/2 tsp. Head Country Original Championship Seasoning
6 Tbsp. butter
1 tsp. Head Country Original Championship Seasoning
2 c. cheddar cheese
1/2 c. heavy cream
1/2 c. milk (Vitamin D or almond milk)

Cooking Instructions

Preheat oven to 425 degrees F. Toss cauliflower with olive oil and Original Championship Seasoning and spread in a single layer in a large baking dish. Bake cauliflower for 15 minutes, or until just softening and beginning to brown.

Meanwhile, make the cheese sauce. In a large sauce pan, melt butter. Add heavy cream, milk, and 1-1/2 c. of the cheese until melted and blended.

Toss cauliflower with cheese sauce. Top with 1/2 c. of the cheese. Bake the mixture in the oven for 10-15 minutes, or until hot and bubbling on the edges.

Fun add-in ideas:
Crumbled bacon
Red pepper flakes
Caramelized red onion
Other types of cheeses: Parmesan, Gouda
Roasted or smoked garlic
Buffalo sauce or hot sauce
